History

Viticulture & Winemaking
Pastoral is a fortified sweet red wine, legally defined in Moldova as containing 15% to 22% alcohol and at least 160 g/L of natural sugar.
The production of this delicious wine follows a traditional Moldovan method that gives this wine its deep color and rich sweetness:
The must (fresh grape juice) undergoes thermal treatment: the grape skins and juice are gently heated between 55–70 °C to extract more color and flavor. Fermentation begins naturally but is stopped early – around 2% alcohol – by adding wine distillate. This process increases the alcohol level and prevents re-fermentation, preserving the natural grape sugars (glucose and fructose) for a luscious sweet finish. No added sugar is allowed.
Only grape-based distillate is permitted in the making of Pastoral wines. In Moldova, the name “Pastoral” is a protected state trademark – producers must meet strict standards and contribute to the national wine fund to use the name.
